- SCOBY. You can get a SCOBY from a friend or online. eBay is a good place to buy a Kombucha starter SCOBY.
Instructions:
Make a tea solution by boiling water and adding the sugar and tea bags. Let the tea bags steep for at least 15 minutes. Remove the tea bags and let the solution cool to room temperature.
Pour the tea solution into a fermentation vessel [preferably glass] and add the SCOBY. If you are using distilled white vinegar or kombucha tea from a previous batch, add that now as well. The vinegar or kombucha tea will help to jump-start the fermentation process.
Cover the vessel with a coffee filter or clean cloth and secure with a rubber band.
Let the kombucha ferment for at least two weeks. The longer it ferments, the more probiotics it will have.
After two weeks, remove the SCOBY and bottle the kombucha. I like to add fruit or herbs to my kombucha but you can drink it plain.
Store the kombucha in the fridge and drink within a few weeks.
